For decades, beef tallow was treated like a nutritional villain. Because it contains a significant amount of saturated fat, many people came to associate it automatically with clogged arteries, weight gain, and poor heart health. Yet tallow was a traditional cooking fat for generations, long before highly refined vegetable oils became commonplace. Today, interest in this old fashioned fat is returning. Beef tallow is remarkably stable when heated, has a high smoke point, and contains a mixture of saturated and monounsaturated fatty acids, including oleic acid, the same major monounsaturated fatty acid found in olive oil.
Tallow also contains small amounts of naturally occurring fat soluble vitamins and compounds such as conjugated linoleic acid, or CLA, although the amounts vary considerably depending on the animal’s diet and how the tallow is produced. One of tallow’s biggest practical advantages is its heat stability. Fats that are relatively resistant to oxidation can be useful for roasting, frying, and other higher temperature cooking methods. Grass fed beef tallow may also have a somewhat different fatty acid and micronutrient profile than tallow from conventionally raised cattle. It is important, however, not to turn tallow’s comeback into another nutritional extreme. It remains high in saturated fat and calories, so quality and quantity both matter.
Perhaps the most interesting lesson from beef tallow is that nutrition is rarely as simple as labeling a traditional food “good” or “bad.” Used sensibly, minimally processed beef tallow can have a place alongside other quality fats such as extra virgin olive oil, avocado oil, nuts, seeds, and fatty fish. Instead of fearing tallow simply because it comes from animal fat, consider the entire diet, how the fat is being used, and what it is replacing. Sometimes the foods we were taught to avoid deserve another look, and beef tallow is a perfect example.
